How often do you offer beef?

We currently butcher once a year in October with the meat being ready for pick up the end of October/early November. *It makes a great Christmas gift! Let us know if you'd like to place an order for October 2025.

What does hanging weight mean?

The hanging weight is once the hide, head and most organs are removed, leaving the meat, bones, and edible organs.

How much meat is a quarter, half, or whole?

We can only give a rough estimate before we receive the weights from the butcher, but typically a whole beef will be around 720lbs hanging weight. Making a half 360lbs and a quarter 180lbs. 

How much meat will I receive?

In general, the final cut and wrapped meat will be around 60%-65% of the hanging weight.

Can I have the edible organs and bones?

Absolutely! We love seeing the whole cow being used. Please ask the butcher about this when you place your order. The bones make great broth.
